The art and history of foie gras, and the picturesque Gascon capital of Auch

At a traditional cannery, discover the art of foie gras — from the preparation of the raw liver to the finished terrine — with a tasting of foie gras, dried duck breast, stuffed necks and confit.

Lunch

After lunch, explore Auch: the picturesque medieval alleyways (pousterles), the Cathedral of Sainte-Marie with its remarkable 16th-century stained glass, carved oak choir stalls and great organ. The monumental staircase, the statue of d'Artagnan — the most celebrated of the Gascons — and the Armagnac Tower round off a magnificent day.

Fourcès and La Romieu, listed villages – The Route of the Bastides and Castelnaux – Discover the birthplace of d’Artagnan

Fources, a perfectly circular bastide listed among the Most Beautiful Villages of France — unique in France for its round plan. Then La Romieu, with its magnificent 14th-century collegiate church (a UNESCO World Heritage Site on the Way of St James).

A gourmet regional lunch:

Garbure, Gascon platter, semi-cooked foie gras, duck confit, apple croustade with Armagnac.

The bastide route continues via Vic-Fezensac and Bassoues, then Lupiac — birthplace of Charles de Batz, the real d'Artagnan — with a visit to the d'Artagnan Museum.
