Gastronomy and the art of living in the Basque Country

Basque cuisine is exceptionally rich and has a truly unique character! Basque cuisine and local produce are renowned far beyond our borders: Espelette pepper, the only spice in France with a Protected Designation of Origin (PDO) status; Bayonne ham, by far the most renowned in France; cured meats and Basque pork; txakoli (a dry, sparkling white ‘fishermen’s wine’); chocolate; Banka trout; sheep’s-milk cheeses; Basque cake… These skills have been passed down through the generations, as has the tradition of supporting local producers through short supply chains. The Basque Country can be savoured as much through its cuisine as through the people you meet – on their farms and in their workshops, alongside our local producers, during visits and tastings of the fruits of their labour and passion.
