Basque cuisine and local produce are renowned far beyond our borders: Espelette pepper, the only spice in France with a Protected Designation of Origin (PDO) status; Bayonne ham, by far the most renowned in France; cured meats and Basque pork; txakoli (a dry, sparkling white wine traditionally enjoyed by fishermen); chocolate; Banka trout; sheep’s milk cheeses; Basque cake… These skills have been passed down through the generations, as has the tradition of supporting local producers through short supply chains.
